Winner of the 2017 "Wagyu Olympics", Kagoshima Prefecture is located on Japan's southern island, Kyushu. Our Wagyu is sourced from Nozaki Farm coop where decades of breeding has produced a herd that delivers 70% A5 grade Wagyu, an unparalleled level of quality and consistency that has made Kagoshima the largest producing prefecture in Japan.

At BMS 10/11, our magnificently marbled steak is one of the richest experiences of Japanese Wagyu there is and, with its trademark coco-nutty retronasal explosion, gives Kobe beef a run for its money at about half the price. Grab your big, chewy Napa Cabernet for maximum palate pleasure.

Hand-Cut For You
Our steaks are hand-cut by skilled butchers. Because each cut is individually prepared and naturally unique, slight variations in weight, shape, and thickness are normal.

Upon Arrival
Your order is shipped frozen and carefully packed to maintain a safe temperature in transit. Place your meat in the refrigerator or freezer promptly upon arrival.

It is normal for products to arrive partially thawed or with some surface softness. If the meat is still cold to the touch, it can be safely refrigerated for use or returned to the freezer.

Thawing
For the best texture and flavor, thaw meat slowly in the refrigerator while it remains sealed in its original packaging. Most steaks will thaw within approximately 24 hours; larger cuts may require additional time.

For faster thawing, keep the product sealed and submerge in cold water. changing the water periodically. Do not thaw meat at room temperature and never place in warm or hot water.

Before Cooking
Remove the steak from its packaging and pat dry before cooking - very important for a nice crust! For the best sear, make sure the surface of the steak is dry before it hits the pan or grill.

"I ordered 3 different A5 ribeyes (Miyazaki, Kagoshima, Sanuki Olive) to do a side by side dinner with friends. All 3 showed up in identical generic packaging with no indication of the specific prefecture. I have emailed 3 separate times over the last 2 weeks with no response. I would not recommend as it is obvious the poor service makes you question the quality, especially when it appears to be 3 of the same ribeyes. Pics are supposedly the Miyazaki and Kagoshima but no way to know."
