Our Hitachi-Gyu Filet Mignon is unlike any other filet mignon you’ve ever tried. Hitachi-Gyu is prized for its beautiful fat marbling which, when melted, gives a tender, juicy, robust flavor to the meat. Its buttery texture is unparalleled and makes for a memorable dining experience. Hitachi-Gyu are the best quality Japanese Black cattle raised in the Ibaraki prefecture. Conditions there are ideal for raising cattle, and these cows receive the best in treatment and lifestyle.
Raised in spacious barns and fed a diet of antibiotic-free, locally-grown feed, Hitachi-Gyu are graded the highest-quality beef. Hitachi-Gyu Filet Mignon (which translates to “fine filet”) is cut from the smaller part of the tenderloin, found along the cow’s back between the ribs and the rump. It’s an especially tender piece of meat and, since only a small amount of Filet Mignon is able to be taken from each cow, it’s typically the most expensive cut.
Despite its high fat content, Hitachi-Gyu meat has numerous health benefits. It’s high in monounsaturated fatty acids, so your body can break it down easily.
