Originally conceived to showcase grass-fed steak to traditional steakhouse customers, these Black Angus steers are rotationally grazed in Oklahoma's year-round "grass-belt" along the 34th parallel for 24-28 months (twice as long as conventional cattle).
Landing somewhere in the USDA's upper choice grade of beef, the resulting steak is worth the wait with a beefy complexity akin to fine Burgundy.
